Rollier is a blue bird originally from Africa. Valentin is naming this cuvée Rollier because it is always made with a majority of Syrah grapes, and when you work with Syrah grapes in the cellar after a few hours, you have blue hands.
Rollier is a medium to full bodied red wine made from Syrah 50%, Grenache 25%, Roussanne 10%, Cinsault 10% & Mourvèdre 5% grapes coming from different vineyard plots around the village of Vallabrix.
Rollier has a superb floral perfume of violet and some spicy notes on the nose. The palate is really lively with heaps of red fruits, tannins are grippy and give a long persistent finish to the wine.
Grapes are whole bunch macerated for 4 weeks and a half in stainless still tank. After pressing wine is transferred by gravity to 228 liters used oak barrels for fermentation and aging.
