Héraclite "sous bois" 2012
Héraclite "sous bois" is a dry sparkling wine made from 60% Pinot noir and 40% Pinot meunier grapes. Pinot noir fruit are coming from "Crayére" vineyard, a 20 year old plot laying on a loamy and chalk soil. Pinot Meunier fruit are coming from "Cumines" vineyard, a 50 year old north facing slope with clay and limestone soil.
This is a powerful blancs de noir style, the wine shows at first on the nose some great aromas coming from the vinification in barrels, some red fruits and spicy aromas. This is an extremely rich wine that needs aeration. The bubble are fine and precise and the wine has some toasty character on the palate. Recommend to decant a few hours before tasting..
Grapes are handpicked at optimal maturity and then gently pressed, after débourbage (natural clarification process), the wine is transferred to 228 liters used oak barrels for fermentation and aged for 12 months, before secondary fermentation in bottle.The wine is aged on the bottle lees for a minimum of 36 months. At disgorgement the wine is topped up with the same wine (no dosage) - Brut Nature.
Alc 12,5% vol, 1897 bottles produced.
