Crémant de Limoux 2012
Crémant de Limoux is a dry sparkling wine made from 100% chardonnay grapes. Fruit is coming from the high altitude (400-500m) cordon trained vineyards in the village of Bouriège and Roquetaillade. Soil is a mix of clay and limestone and most of the vineyard are south facing.
This wine shows some great layers of complexity. Toastiness and creaminess coming from the ripe grapes & the long aging on the fine bottle lees. Some nutty notes describing a slight evolution and the mousse is really elegant and subtle, great length and vinous character with a lovely mineral finish - easily comparable with a great grower Champagne.
Grapes are handpicked at optimal maturity and then gently crushed with a pneumatic press following the same juice extraction as in Champagne. The base wine is fermented and aged in 600 liters used oak barrels before secondary fermentation in bottle. The wine is aged on the bottle lees for a minimum of 48 months. At disgorgement the wine is topped up with the same wine (no dosage) - Brut Nature. Disgorged in April 2017.
