After earning a degree in International law, Valentin decided that he would prefer making wines and learned winemaking in Alsace, where he was influenced by winemakers like Bruno Schueller and Pierre Frick.
In 2014, He took over the family domain and quickly introduced TCS (simplified cultivation techniques) in the vineyard.
Valentin is looking after 6 ha of vineyard, Chardonnay and Savagnin for the white grapes, Pinot, Trousseau and Poulsard for reds.
Soils here are typically Jurassic soil composed of Triassic Marne (marl). Vines are on average 30 to 35 years old and Valentin is aiming to replant some Savagnin and Poulsard this year. Both coming from massale selection. Cutings from Philippe Bornard have been used for The Poulsard and from Domaine Labet for Savagnin.
Minimum intervention in the cellar, as Valentin wants to have true wines, reds are destemmed, macerated and aged in stainless still tank unlike whites which are pressed, fermented and aged in barriques.
