Timothée´s grandfather came from Alsace in the sixties and bought some plots in this 1st cru Village. At that time, land was still affordable. He has created a domain with 3, 5 ha of vineyards and starting with delivering grapes to the cave cooperative.
Two generations later, Timothée had the dream to produce his own champagne from the plots planted by his grandfather. After studying wine and working in Burgundy, Timothée slowly got back the plots that were spread out within the family members. Installation was done by steps, 2001 the vineyards, 2005 first wines were produced.
The domain encompasses the three known Champagne varieties: 55% of Pinot Meunier, 35% of Pinot Noir mainly from old vines and the rest of Chardonnay.
Timothée makes Champagne with his guts, he needs to feel something when he makes the wine. Hence, he is focusing on producing only vintage Champagne and will not produce Champagne every year, He doesn´t want to remove any character from the grapes, he is very low interventionist in the cellar using no additives except very low amount of sulphur when needed. Alcoholic and malolactic fermentation happens naturally, wines are not cold stabilised and there is no dosage or nor filtration.
